pick up something like an EasyCap USB capture card. It allows you to plug in your 360 (or any other console) and you can use software to view the stream from it (Most apps recognise it as a webcam). I would use a different brand to EasyCap though, as i bought one and found that the resolution was fairly poor, and it took a lot of fiddling around with settings and stuff just to get it working properly.

Don't listen to blobby's advice on this one. Xbox and Xbox 360s have native support for standard VGA connections. You will have to buy a new cable, though, but at least you might enjoy higher resolutions with your games.

I don't think many laptops allow VGA input.

You could buy the X-Box 360 Laptop for 20 grand. I'm not kidding, in OXM issue... April 09/ Issue #95 page 62, a hacker named Ben Heckendorn disassembles 360s and makes them into laptops and other awesome gadgets. Unfortunately, the price is a bit steep.

Video capture is really no solution, it would cause a delay that would make most games unplayable. I tried this with my GameCube a while ago and it was just horrible.

I don't think there's an easy answer, I think you'll just have to take an extra display with you. It would be better to have them on separate screens anyway, you don't want to have to switch between displays, VGA input on laptops is something we never see though.
