The best thing to do is, (or at least thats how i do it, i cant speak for someone else) look for reference images.
Maybe draw your own image, scan it or draw it with a pen tablet.
(front and side image of the character)
Use them to create your overall basic mesh. Look on google how the wireframe looks on people their 3d character models.
So you know how to let it flow. Download some anatomy pictures, chest, back, arm, shoulder, hand, feet, upper-legs etc..etc.
And when you sculpt the model, keep the image (of the part that you are sculpting) open.
As for the texture, you can use a render to texture function.
And render the ambience or ambient lighting (however you want to call it)
And just adjust the transparency so it isnt to visible.
Basically, follow some tutorials. Look for images how the polies flow on people their character.
And put time in the texture, the texture makes the model.
Dont drop a basic "marmer" texture on the model and suspect that it would look like human skin.
Organic models should have a realistic skin texture. And it shouldnt be the same on the whole body.
They would need some veins, some spots and some scars.
I dont think that anyone has a perfect skin.
