(what follows now is not ment as disrespect, its ment to make your workflow easier)
btw i would suggest to keep the current polyflow
that way you will end up with the middle lod version
now later on what you can do to reduce polys is the following
add a decimate modifier
go to Un-Subdivide
and under iterations set it to 2 = the result should be a even distributed lowpoly version of your model
now one thing is important to keep in mind
when constructing your model/ make it quads - always quads
do not use tris/ triangles
simply later on if your mesh has tris and quads
you wont get the results you expect
and to get teh highpoly lod version of your model
just add a multires modifier/ apply it
and then you have to tweak teh edge loops/ meaning
go into edit mode
select one or more of the obsolete edgeloops (the ones that are just too much) and press x
and now instead of using delete - edge loops
you have to use limited dissolve
this way you you keep the uvs intact!
and if it happens that the limited dissolve dint deleted the selected edge loop totally just press x again and then you can use edge loops - delete
