Has anyone ever done it?

How could anyone ever texture a sphere with an earth image?

I mean, could you rotate it and it and look at it from all sides? Would it look like the real thing?

It is easy, just pick an Earth texture, available at many places at the Internet, create a sphere and texture it.
However, to get a good looking Earth you will have to use several spheres with some shaders applied:
