Well good luck! Graphics don't need to hold up development. Those can easily be swapped in later as you get to it or find an artist to redo the placeholder art.
At least that is my view on it. Most important is making a great game (playability wise) and then audio video can be changed whenever. Same way as people who make one game and then reskin it to create half a dozen "new" games in a week or two.
