Go to:
Files/languagebank/<your language>/gamebank/mygame
Open the "setuplevel.fpi" file in Notepad.
Look for this line:
:state=0:hudreset,hudx=88,hudy=12,hudsizex=16,hudsizey=16,hudimage=gamecorehudsnumeric1.tga,hudtype=3,hudmake=numeric
Put a semicolon ( ; ) in front of that line. This will "comment it out" making it so FPSC ignores it. Now, the numbers will no longer appear to show ammo count.
To make a gun HAVE ammo, but NOT require a reload:
Go to:
Files/gamecore/guns
Find the folder and subfolder for the gun you want to edit.
For demonstration, I'll choose the scifi/blaster. Go into that folder and open the "gunspec.txt" file.
Now, directly underneath where it says ";GUN Settings", add the following line:
You're now set. If you place a Blaster in your level and run the game, you'll see that not only do the ammo numbers NOT show up, but your blaster no longer reloads, it will simply shoot until it is completely out of ammo.
HAVE FUN!!!

Can a Mod please rename this thread to something more specific? Thank you!
