Does anyone know how to modify the TF 341 ammo/weapon pickup script to instantly pickup the item instead of having to press return?

If you want to use Errant's HUDs, simply open up weapon.fpi and change the file paths to Errant's huds. I think that will work. Try it and see if it works.
