With regards to your first question, it really depends on which modelling program you use, and how skilled you are with it, then anyone on the forums could give you links to several different tutorials on how to import animated weapons from Blender for example, or Milkshape, etc.
Your second question is easier to answer, but much less easy to implement. FPSC is not really designed to support outdoor levels, but it CAN be done, here are a few links to previously made and answered threads on the topic (including a full tutorial)

Your third question is a matter of scripting, in which case you'll want to head over to the scripts section of the FPSC board, and use the search bar at the bottom to see if your question has already been answered. Failing that, google it first. Of course it it hasn't been answered feel free to start a new thread, I'm sure that Black Fox, Corno_1 or another scripting veteran will be glad to help you out
As for Water, thankfully some very talented people have made very easy-to-use "Water-Zones" for FPSC, and you can download them here:

Finally, I am afraid I don't quite understand your last question. You say the size/mass of the map is very small? There is no way to change the size of the Map Grid, but I can't see why you would want to - FPSC couldn't handle rendering such large environments. Anyway, Hope I helped. Have fun learning FPSC!
