Yes you can, do you mean like to "activate" with a trigger, or something else?
Here is a simple water trigger script. Note the "waterheight=275" which means "level-2 and 75% of that level"

And this one is just "waterinzone". The "waterheightofzone=" (any number0-100), means the water height of the zone script is placed in.

You can also just used the "pageup" and "pagedown" keys to adjust the water height during "test mode" and
hit "enter" to save.
