If I create a level in cartography shop and export to csm will the collision work on its own.

well, with a cshop level, you could convert it to a bsp and do collision that way, but it is pretty buggy, so what i suggest is pay $15 and buy nuclear glory's collision dll.....this dll is amazing! but back to your question, no the collision will not just "work"

do the washing up
do something you want(stop or die)

Standard collision will in all likelihood be too slow. Cut your losses and get NG collision.

or depending on the collision detail you need, you could just code it yourself, and if the levels not too big or complex sometimes it easier to hardcode it.
