I have made a bunch of plains, and put them close together, and there is a slight clipping problem. If I made them into limbs of a single model, would I get the same clipping problems?

Set Camera Range Close,Far ... That is basically the area in which the ZBuffer works; the smaller the range the better the buffer works.
Sorry but that's just how it works, try to use it as a focal depth for what you need and try to work to a 1,000 DBU area for best results.
