I want objects to turn white when hit - texturing them white or something is not an option.

I think the fade object command might be used, but I can't get my head around it. My ambient light level is 50.

I frequently use fade object, and it works like this:

It only affects how much light your objects recieve from lights (the ones you create.) If an object is ghosted, then you can use fade object to make it disappear, if your ambient light is 0. I actually use ambient light 0 and then 2 directional lights to light the world. Then I can ghost my special effects and use fade object to make them slowly fade away. I also use high values of fade object to make them bright, but I doubt you can get them to go white.

Why can't you change textures?

a fade value of about 250 makes a black object look white, see code:

Prolly can't change textures 'cuz the object IS textured.
