Hey, I bought a new watch recently and can't figure out what the rotating bezel is for. If anyone knows what they are for and how to use them I'd be grateful to know.

Depends on the type of watch. Usually, it's a simple countdown function. For example, if you want to measure 15 minutes, you move the "15" position to the current time. When the minute hand reaches the zero mark...ta daa!
