I'll just answer a few questions here:

Definitely! The first day of the job (July 11th) I'll ask the head guys what I can and can't tell people. Then I'll post the info here because I know I'd be interested if I were you guys

I seriously thought it was going to be the two founders asking me non-technical questions. Turns out it was the lead programmer on the project asking all the questions! Good thing I was reading my C++ reference book on the train to work that morning to be safe!

Because this game will be made by a small team, we will all be in one big room. This will ensure that we have full and immediate access to anything we need from each other. As for EA, I've worked for them as a tester AND a programmer, and where I worked out of (EA Blackbox) all of the developers were in open cubicles. Think Dilbert without the tall walls
