I have made many 3D models in Maya 7.0 and then I convert the files into .x files yet the models, even with all the required files, don't run. I need some advice. Is there something I'm doing wrong or is it just that Maya .x files don't work???

If you post one of your models and let someone take a look at it maybe we can figure out what is wrong.
To import .x files into FPSC you need the .x model,an FPE file, and a texture. There are several ways to do this.
There is a free entity creator with a tutorial you can download on the FPSC downloads page.
Buy ECS Pro and use it.
Buy Magic FPS and use it.
I think Dodic has one but I can't remember the name of it even though I use it too.
Copy a FPE from an .x file that already is in the game and edit it.
If you search the forums you will find any information I have not explained to you.
