does anyone have a absolutely complete guide to modelling and texturing, including uv mapping? if so please post it here or post a link to it.

No, there is one important reason for this:

Its such a huge subject that you have to be more specific. Plus, it varies for what your modelling and what program(s) you're using.

The closest thing on this forum is Bond's UV mapping tutorial or my sticky thread here:

Other than i suggest reading the manual to your 3D modelling package (asuming you have one).

Look in the 3D Chat forum for information.I don't think you will ever find a "complete" modeling/texturing guide being as there are a boatload of modeling and texturing programs out there.
Whatever modeling or texturing app you use should have tutorials and/or some kind of support forums.
