IPL won't run on a fat32 (aka windows) formatted ipod without creating an aditional ext2 partiton. If you have a hfs+ (aka mac) formatted ipod you don't need to partition.
To remove it all you should have to do is remove the ext2 partition and restore the firmware partiton. I belive the IPL installer makes a backup of the firmware partition and can restore it. If you really mess it up the Apple ipod updater software will sort it out but will format the whole drive.
I'm sure the
installer does pretty much everything for you and is pretty simple.
If you just want to do normal audio player stuff perhaps try
rockbox instead of IPL.
