How would I go about puting a little display bar at the bottom of the screen, to keep track of items and health which are clickable at any point of the game?

You can paste an image to the screen in the loop. You can make a 3d object, position it where you want and "lock object on". Probably, the best way is to make a sprite.

Make a plain, and texture the plain. Lock object on. Get screen coordinates of the buttons. Top, Left, Bottom, right. Check if the mouse is inside the coordinates when clicked.
