Is there a way to capture my gameplay as .avi footage?

Indeed. You can use something like fraps:
http://www.fraps.com

It's a commercial product, but they have a free version. Although in the free version, the maximum recording lenght of a clip is 30 seconds.

Fraps is the best of the recorders I've ever used, but to get your avi to a decent quality, it'll use up like 100MB every 30 seconds!
Even a 120 GB hard drive doesn't seem to have enough space for fraps moives...

I know you're supposed to resample them with something like windows movie maker, but while recording, that's not an option...

I meant whilst recording - 30 seconds is OK for some things, but for other things definately not...

Say a pvp video in world of warcraft - I see tons of those (although I've never actually played the game...). you can't realistically fight for 30 seconds, then minimize and resample your avi, wait a couple of minutes while it works, then have another 30 second bout can you?
