U is the horizontal size of the image.(up and down)
V is the vertical size of the image.(side to side)

A U value of 1 and a V value of 1 will not change the size of the image.

Ex.
If the U value was 2 and the V value 1 then the image would be streched double horizontally and the vertical would be the same.

Hope that make more sense

actually VERTICAL means up and down, and horizontal is left to right, that why the sun rises over the HORIZION LINE
