Is it true that I can apply only ONE shader per object / character?

For example bumpent.fx with an _N.dds map

OR

illuminateent.fx with a _I.dds map etc.?

So does it make sense to create all the _D2, _ D, _N, _S and _I maps for one entity?

Havent worked with shaders, but I know some of the fx files use more than one texture file.
Infact if you open the .fx files with notepad, you can see the description given.
