Sorry Mr. Tatters I would'nt quote if you had'nt given slight mis-information.
Every game in fact uses triangles, even though you would model preferably in quads, the game engine would convert it to triangles (at least FPSC does) otherwise the format you export it to will do it.
A bit more on topic:
2500 polies is a nice and average number and it will be good training for many to be able to model to lower polycounts while still making it look good.
The company I work for has limits of 800 polies per human sized character and even with that limit it still looks good...
It really depends on the artist and not the tools you use, a good artist can make everything look good with any limit.
